Morning Bandera Buddies,

This suggestion may seem obvious to some of you, but may come in handy for those that have not thought of it, as I had not until last night. 

Last night I smoked a whole salmon filet, instead of putting it right on the Bandera grate I put it on a porcelain 'Grill Topper', the kind with the pattern of holes in it that is advertised to make flipping burgers and fish easier. The 'Topper' was 16"x12" and fit in the Bandera perfectly.

This made everything about cooking the filet easier, no spatulas tearing it up when I rotated it, easy in and out and the filet slid off the 'Topper' right on the platter for perfect presentation at the table. If you do not already have one of these "Toppers" I recommend it highly.
